			<content:encoded><![CDATA[<p>When I was young, my dad was always cooking.  Smells would fill the house and my sister and I would get antsy asking “is it ready yet” over and over. At the time I was much less interested in the process of cooking and far more interested in the product, but as I grew up I started to pay more attention to how he was making the magic that ended up on my plate. As an adult, I fell in love with cooking, and find the process of it healing and meditative. In this blog I hope to share some of my favorite recipes. I live a completely vegetarian and often vegan lifestyle, and I do not eat gluten. I am always on a quest in my meals to create a balance between health and taste, indulgence and intellect. I strive to eat only organic and, when possible, local foods. Since giving up gluten I have experienced a surge in energy and overall health. I recommend it to anyone battling with digestive issues, exhaustion or simply a feeling of heaviness. I’ve been vegetarian for longer than I can remember, so have no means to compare my lifestyle to a meat-eating one (and do not wish to). To me, <em>ahimsa</em> means non-violence&#8212; to our bodies, each other, the planet and all the creatures on it. Happy cooking.</p>

There are no roads leading to the Xinalani Retreat Center; instead, the property is surrounded by 10 acres of unspoiled jungle and pristine beaches on the southern shore of Banderas Bay. With fifteen ocean-front suites, two yoga studios, a resident chef well versed in the principles of raw food, ayurveda cuisine and macrobiotics (all food is gourmet vegetarian based on locally grown produce or freshly caught fish and seafood), a supporting staff, and a spa menu specially designed for yogis, Xinalani is undoubtedly the place to break from New England’s long cold winter.</p>

<p>Each morning Georgia or Ame will alternate leading a two-hour sweaty solar-inspired asana practice, and each late afternoon, a 90-minute cooling lunar-inspired asana and meditation practice. The rest of the day is limitless: bask in the sun on a white sand beach, ride the panga (a traditional fishing boat) to see dolphins, whales and sea turtles, (time out, fresh guacamole and chips anyone?), nap in your open-air suite, surf the waves only steps away from your bed or for the novice surfers- take a lesson, or for the foodies- take a cooking class, get a massage or facial, take a hike through the surrounding jungle…just be sure to fit it all in before a delicious candlelit dinner with friends.</p>

<p>The art of backbending is often elusive, sometimes scary and intangible for many. In this workshop Ame will lead a vinyasa flow class to open the hip flexors, spine and shoulders and in preparation for urvha danurasana. During class Ame will discuss the proper alignment for various backbends and the mental blocks and fear that often keeps us from practicing them. Backbends are exhilarating postures when done well and can dramatically alter your practice and emotional state.  Come ready to be challenged, aligned and inspired.</p>

<li>How to bring greater joy to your own life and those of everyone else around you!</li>
