“Goddess” Dressing
I often joke that if I weren’t a yoga teacher, I would start a salad-dressing company. One of the easiest things to make, homemade salad dressings are a great way to get a lot of vitamins and nutrients at once, while making your greens more exciting. Below is my favorite salad dressing, and one I make weekly. The combo of B12-rich and high protein miso and omega-3 loaded flax oil provides vegans a lot of nutritional value difficult to find elsewhere. Toss it with salad greens, edamame, avocado and almonds for a light but satisfying meal.
1 heaping tablespoon white miso
1 heaping tablespoon tahini (raw or roasted— both are great)
Juice of 1 lemon
½ cup flax oil
1 garlic clove
fresh ginger (I put about a finger’s length)
1 bunch fresh dill (or dried if not in season—about 1 teaspoon)
water to thin it out
Mix all ingredients in a mini food processor for about a minute. Add small amounts of water until the mixture is creamy but liquid. Store in container in fridge and it will last about a week.
